MINT - ROASTED POTATOES 
8 sm. new potatoes (about 1 lb.)
Vegetable cooking spray
1 tbsp. olive oil
1 tbsp. dried mint leaves
1/2 tsp. salt
1/4 tsp. white pepper
1 clove garlic, crushed

Scrub potatoes. Peel a 1/2 inch strip around center of each potato. Place potatoes in a 1 quart baking dish coated with cooking spray.

Combine remaining ingredients; brush over potatoes. Cover and bake at 425 degrees for 20-25 minutes or until tender, stirring after 10 minutes. Yield: 4 servings (about 122 calories per 2 potatoes).
