BEST PORK CHOPS EVER 
Use boneless pork chops for this recipe. If you watch your fat intake, trim all fat off the chops before pounding. Allow 2 chops for a generous serving, one large chop for a light eater. Watch out, the kids gobble these up.

Boneless pork chops, trimmed to individual taste.

Everyday French's mustard, any brand is acceptable.

Ritz crackers - low salt if you watch sodium intake.

Crumble Ritz crackers into pieces 1/4 to 1/2 inches. Do not process in food processor. Put them in a plastic bag and crumble them with your hands. Pound pork chops between pieces of plastic wrap to tenderize.

Slather each pork chop with mustard, and dip into Ritz cracker crumbs, completely covering both sides of chop. Bake at 350 degrees for 45-60 minutes, depending on the thickness of the chops.
