Spread 4 slices of bread with as much filling as you can with out running over the edges. Place remaining 4 slices on top to complete the sandwich. Cover completely and refrigerate overnight.

Beat the eggs, milk, vanilla and cinnamon well. Dip each sandwich into the egg mixture til coated well. Fry on a griddle til golden on each side.

Serve with whipped cream and fresh strawberries, or maple syrup, or your favorite toppings.
