EASY STIR-FRY CHICKEN & BROCCOLI 
1 lb. chicken breast strips
2 tbsp. oil
4 c. vegetables (broccoli, red & green peppers strips, sliced water chestnuts)
1 1/2 c. chicken broth
3 tbsp. soy sauce
3 tbsp. cornstarch
2 tsp. brown sugar
1 1/2 c. rice

Stir fry chicken in hot oil in large skillet until brown. Add vegetables; stir until done. Mix broth, soy, cornstarch and sugar. Add to skillet. Boil, continue for 2 minutes. Prepare rice. Serve chicken mixture over hot rice.

This was a perfect combination of all recipes on this site labeled "Stir-Fry". I'm quite sure that this was the first meal I have ever cooked, and thoroughly enjoyed it. Please remember stir-fry is a special technique, and not a method of allowing ingredients to simmer to a brown murky mess of mush. With that in mind, this recipe will work well.

I made this last night and it turned out GREAT. I used 1 Red Pepper, 1 Green Pepper, 1 can of sliced Water Chestnuts and maybe less than a cup of microwave-steamed broccoli. (I only put the broccoli in at the very very end to avoid it getting overcooked0. The only differences from this recipe is that I used almost 1.5lbs of chicken breast and I also added some garlic. The broth mixture made this recipe REALLY REALLY tasty and it was easy to make.

Great recipe! I really like using smoked beef sausage and beef broth instead. I use a wok on a gas stove too. I also add garlic and sombol (a spicy sauce) to it. 1 tbsp.
