EASY STIR-FRY CHICKEN & BROCCOLI 
1 lb. chicken breast strips
2 tbsp. oil
4 c. vegetables (broccoli, red & green peppers strips, sliced water chestnuts)
1 1/2 c. chicken broth
3 tbsp. soy sauce
3 tbsp. cornstarch
2 tsp. brown sugar
1 1/2 c. rice

Stir fry chicken in hot oil in large skillet until brown. Add vegetables; stir until done. Mix broth, soy, cornstarch and sugar. Add to skillet. Boil, continue for 2 minutes. Prepare rice. Serve chicken mixture over hot rice.

I needed something quick and easy to make on a school night. I was sick of the same old breaded chicken cutlets, so I tried this recipe. It was very easy and my family loved it. I just used broccoli since vegetables aren't popular with the younger crowd. The sauce isn't overpowering and adds just the right amount of flavor. I highly recommend this recipe!

Easy to prepare but pretty bland. If I try it again, I'll add some garlic and maybe some cracked red pepper for a little kick. Also, I mixed in lo mein noodles instead of serving over rice and it ended up being a little too starchy. I'll skip the corn starch next time.

So good. I used low sodium soy sauce and chicken broth. Yummy. And it was guy-approved too! Try it and you'll see. Make sure you season your chicken. I used salt pepper garlic and parsley. Cooked it in some coconut oil just because it was on the counter already but wonderful outcome. A. Will make it again in future. I like easy recipes only.

Great dish, my boyfriend raved about it! I served it with brown rice. Before I cooked the chicken I seasoned it with crushed red pepper (if you prefer it spicy), ground ginger and pepper (I added no extra salt due to the sodium in the soy sauce) and I did add more soy sauce tan the recipe called for just to add more flavor!

I would highly recommend this recipe!! Sooooo good!! I edited it a bit though. I only did chicken and broccoli, no other veggies. Cooked my chicken with minced garlic and half small sweet onion. Mixed 1 can of chicken broth with 1/4 c. stir fry sauce (because I had a little left in the fridge and wanted to use up), the soy sauce, upped it to about 2 tbsp. of brown sugar, a dash of cinnamon, just a little pepper, added to chicken once done. Cooked the broccoli in the broth mixture and chicken, then added the corn starch/ water mixture to thicken once broccoli was done. Mmmm, so good! Serves 4-6.
