GRANDMA'S SHRIMP SALAD | |
1 med. red onion 2 cloves garlic 2-5 tbsp. red wine vinegar 2 celery stalks 1 head lettuce 2 cans cleaned shrimp 1/2 c. mayonnaise Finely chop 1/2 of the red onion; put into large bowl. Mince garlic cloves and add to onions. Add vinegar, stir and let the mixture marinate for at least 20 minutes. (This mixture can be made ahead, the longer it sits, the better the taste.) Chop celery and add to bowl. Add lettuce (tear or chop). Drain the shrimp and add. Mix in 1/2 cup mayonnaise (you may add more but don't overwhelm the salad). Refrigerate or serve. This salad keeps nicely for a couple days. Director's Office |
