SPLIT PEA SOUP 
1 ham hock
2 qts. water
2 c. (1 pkg.) split peas
1 stalk celery, chopped
1 lg. carrot, chopped
1/8 tsp. thyme (leaf)
1 bay leaf
Salt
Pepper

Soak peas overnight, drain next day. Place ingredients in kettle; boil for 20 minutes. Then simmer for 2 hours or until peas are done.
