SPLIT PEA SOUP SANTA FE 
1 c. chopped onion
1/2 c. chopped celery
3-4 cloves garlic, minced
1 tbsp. vegetable oil
2 c. dry split peas
2 qt. beef or chicken stock
1 1/2 c. sliced Polish sausage
2-3 sm. whole red peppers
1 tsp. oregano
1 tsp. cumin
1 tsp. coriander (cilantro or parsley)
Salt and pepper to taste

In large pot, saute onion, celery, and garlic in oil until tender. Add peas, stock, sausage and seasonings. Heat to boiling. Cover and simmer about 1 hour.
