FIESTA TAMALE PIE 
1 sm. onion
1 clove garlic, minced
1 tbsp. fat
1 lb. ground beef
1 (1 lb.) can tomatoes
1 (1 lb.) can whole kernel corn, drained
1 1/2 tsp. salt
1 1/2 tsp. chili powder
1 c. grated cheddar cheese
18 pitted ripe olives
1 c. cornmeal
1 c. milk
2 eggs, well beaten

Heat oven to 350 degrees. Saute onion and garlic in hot fat until yellow. Add meat and brown. Pour off excess fat. Add vegetables and seasonings; bring to boil. Pour mixture into square baking dish, 9x9. Press olives into mixture. Combine corn meal, milk and eggs. Spoon over filling. Sprinkle with cheese. Bake 1 hour. Yield: 6-8 servings.
