BAKED CARAMEL CORN 
2 c. brown sugar
1/2 c. Karo syrup
1 tsp. baking soda
1 c. nuts (if desired)
1 c. butter
1 tsp. salt
1 tsp. vanilla
6 qts. popped popcorn

Bring to a boil (over medium heat, not high or it will possibly burn), brown sugar, butter, syrup, and salt. Continue to boil for 5 minutes. Remove from heat and add soda and vanilla. Stir into popcorn. If desired, add nuts. Place in large pan such as a large roaster. Bake at 200 degrees for 1 hour, stirring at 15 minutes intervals. Cool on waxed paper. Store in tightly covered container.
