FRUITED PORK CHOPS | |
1 tbsp. butter 1 1/2 lb. thin pork chops 1 lg. onion, sliced 1/2 tsp. dried thyme, or to taste 1/2 tsp. salt, or to taste 1/8 tsp. pepper 1/2 c. chicken broth 2 tbsp. raisins 2 lg. peaches, sliced In large skillet, melt butter over medium heat. Add pork chops. Cook until browned, turning once. Remove chops, add onion to pan drippings and cook until golden and wilted, stirring occasionally. Arrange pork chops over onion; sprinkle with thyme, salt, and pepper. Add broth and raisins; cover and simmer 10 minutes or until chops are tender and raisins plump. Add peaches and heat through. Makes 4 servings. |
