GERMAN APPLESAUCE CAKE | |
4 eggs 4 c. sugar 1 qt. applesauce 1 qt. pecans 1 lb. raisins (half white and dark) 3 or more c. flour 2 sticks butter 2 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. cloves 1 tsp. nutmeg 1 tsp. allspice Beat eggs, add sugar and mix well. Add butter. Beat until fluffy. Mix flour with soda, salt and spices. Add 1 cup flour to pecans and raisins to coat well. Mix in applesauce. Add 2 cups flour and mix well. If you think the mixture needs more flour add 1/2 cup at a time. Bake at 350 degrees in 4 layers. Approximately 20 to 25 minutes. FROSTING: 3 c. confectioners' sugar 1 stick butter 1/4 c. milk Melt butter, add sugar, beat well while adding milk. Spread between layers and on top of cake. Leave sides unfrosted. This makes a huge cake and is best baked a day or so before using. |
