SWEET POTATOES A'LA ORANGE 
2 lbs. fresh sweet potatoes, cooked
2 tbsp. butter, melted
1/2 tsp. cinnamon
16 apricot halves
Fresh orange slices

Or 2 pounds vacuum-packed sweet potatoes.

Arrange sweet potatoes in shallow baking dish. Combine butter and cinnamon. Pour over potatoes. Arrange apricot halves on top. Cover dish and bake at 425 degrees for about 15 minutes. Add orange slices and serve. 4 servings. 185 calories.
