SWEET POTATOES WITH ORANGE 
4 lg. sweet potatoes
1/2 c. orange juice
2 crushed pineapple
Grated zest of 1/2 orange
Pinch of grated nutmeg
Pinch of white pepper

1. Place potatoes in a large pot of water; bring to a boil and cook for 30 to 40 minutes or until tender. Set aside to cool slightly.

2. When potatoes are cool enough to handle, peel them and place in a bowl. Mash with the orange juice, crushed pineapple, orange zest, nutmeg, and pepper.

3. Return mashed potatoes to the pot and reheat over medium heat. If not serving immediately, cover bowl and refrigerate mashed potatoes until 1 hour before serving. Transfer to an oven-proof dish. Cover and reheat in a 350 degree oven for 25 minutes or until hot. Makes 5 servings.
