PUMPKIN CAKE 
2 c. pumpkin
3 c. plain flour
2 tsp. Calumet baking powder
2 tsp. baking soda
3 tsp. cinnamon
1 tsp. allspice
2 c. sugar
1 1/2 c. vegetable oil

ICING:

2 tbsp. butter
2 tbsp. flour
1 box XXX sugar
Juice of 1 lemon, also rind
1 orange, as needed

Mix oil, sugar and 4 unbeaten eggs. Mix well. Sift together flour, baking soda, baking powder, spices and salt. Add alternately cooked mashed pumpkin with flour mixture then add to oil mixture; mix well and bake in 350 degree oven for 30 to 40 minutes. Ice with above icing using pineapple juice or apricot nectar as alternate.
