$POTATO PANCAKES$ | |
6 lg. Idaho potatoes 3 eggs 1 med. onion, grated 1/2 c. unsifted flour 2 tsp. salt Vegetable oil Pare potatoes, shred directly into ice water. Drain; rinse in cold water; drain very well. Beat eggs, add potatoes, onions, flour and salt. Blend well. Heat 1/4 inch oil in fry pan. Drop 1/4 cup potato mixture into hot oil. Turn; brown both sides. Drain on brown paper bag. Serve hot with applesauce. |
