POTATO LATKES (Pancakes) 
2 eggs
3 c. grated, drained potatoes
4 tbsp. grated onion
1 tsp. salt
1/4 tsp. salt
2 tbsp. cracker or matzoh meal
1/2 c. fat, butter or vegetable oil

Beat the eggs. Add the potatoes, onion, salt, pepper and meal. Heat oil in a frying pan and drop the potato mixture into it by the tablespoon. Fry until browned on both sides. Keep hot. Serves 8.
