POTATO PANCAKES 
4 lg. potatoes, grated
1/8 c. grated onion
2 tbsp. flour
1 egg, slightly beaten or 1 egg white plus 1 tsp. vegetable oil
Applesauce (optional)

Keep grated potatoes covered with cold water until ready to mix other ingredients to prevent discoloration.

Mix all ingredients in large bowl. Spoon onto preheated nonstick or lightly oiled skillet and cook as you would regular pancakes. (Turn cakes when edges become lightly browned.) Serve warm with applesauce.

Serves 6-8.
