DAY-AHEAD BEEF BRISKET 
4-5 lb. beef brisket
1 pkg. onion soup mix
1 med. onion, sliced & separated
2 med. stalks celery, chopped
1/2 bottle chili sauce
1 bottle BBQ sauce
1/2 c. water
1 can beer

Brown beef on all sides in oil; drain. Sprinkle dry soup mix over meat. Arrange onion rings and celery on top. Combine chili sauce, BBQ sauce and water. Pour mixture around meat. Bake, covered in 350 degree oven, allowing 45 minutes per pound. Baste meat occasionally. About 45 minutes before meat is done, pour beer over top. Bake covered until done. Refrigerate in liquid overnight. Remove all grease from liquid. Slice meat across grain and heat in sauce. Serve with sauce.
