ROAST PORK OR LAMB 
Pork picnic, fresh ham or leg of lamb

Potatoes, peeled

1 jar sauerkraut

4-6 cloves garlic

Crush garlic in mortar, add salt (Kosher) and pepper; make a paste. Rub all over meat. Take a clove of garlic, cut in small pieces. Poke holes in meat, put pieces of garlic in it.

Roast meat at 350 degrees about 1 1/2 hours before meat is done; put potatoes in with roast. Turn them at least once. They should be brown.

When meat is done, remove it and potatoes to platter. Pour excess grease out of pan leaving the brown drippings. Wash sauerkraut and drain; put in pan with drippings. Mix well to coat and heat up on top of stove. Serve applesauce on the side.
