PORK LOIN WITH SAUERKRAUT 
1 (5 lb.) pork loin
1/4 tsp. pepper
2 (1 lb.) bags sauerkraut
1 tsp. caraway seed
2 med. apples
1 c. boiling water
1 tbsp. brown sugar

Heat oven to 350 degrees. Rinse roast and put in center of roasting pan. Sprinkle with pepper. Roast uncovered 2 hours. Drain and rinse sauerkraut, stir in caraway seed. Wash, core and slice apples, stir into sauerkraut. Remove roast from oven, spoon fat from pan.

Pour boiling water into pan and stir to loosen browned pieces in bottom. Spoon sauerkraut around roast, cover and bake 30-60 minutes until roast is tender. Serve with mashed potatoes.
