PORK & SAUERKRAUT 
4 lbs. pork loin
3 lbs. sauerkraut
1 (16 oz.) can tomatoes, cut up
2 carrots, cut into sticks
3 stalks celery, sliced into 1" pieces
4 tbsp. brown sugar
1 lg. onion, cut into wedges
2 bay leaves
1 lg. red apple, cut into wedges
1/2 tsp. oregano, crushed
1/4 c. snipped parsley
1 tsp. peppercorns

Step 1: Place half of sauerkraut in the bottom of roasting pan. Add pork loin. Put remaining sauerkraut over pork. Pour tomatoes over sauerkraut.

Step 2: Add celery, carrots, onion, apple, around edge of roasting pan, sprinkle brown sugar over tomatoes and sauerkraut. Add remaining seasonings.

Step 3: Cook, covered in 325 degree oven for 3 to 3 1/2 hours or until meat is done. Baste with juice frequently. Serves 6 to 8.
