SOUTH COAST HOMINY | |
3 tbsp. butter 1 sm. onion, minced 1/2 c. chopped green pepper 3 tbsp. flour 1 tsp. salt 1/2 tsp. dry mustard Dash of cayenne 1 1/2 c. milk 1 c. grated Cheddar cheese 1/2 c. pitted black olives 1 can (1 lb. 13 oz.) hominy, drained 1/2 c. buttered bread crumbs Melt the butter and saute the onions and pepper. Blend in flour and seasonings. Add milk gradually. Stir until thickened. Add cheese and stir until melted. Remove from heat and add olives and hominy. Pour into a 1 1/2 quart casserole. Sprinkle with bread crumbs and bake at 375 degrees for 30 minutes. |
