TOFU PATTIES 
1 lb. tofu, mashed
1 c. finely chopped celery
1 c. finely chopped onion
1 - 1 1/2 c. cooked rice
Salt to taste
2 tbsp. dried parsley or 4 tbsp. fresh
1/2 c. bread crumbs
1/2 c. oatmeal
4 tbsp. soy mayonnaise
1 tsp. McKay's chicken style seasoning

Mix together. Add soy milk if consistency is too stiff. Let mixture set for 10 minutes and check consistency again. If still too stiff, add more soy milk. Mix again and shape into balls or patties and roll in seasoned or regular bread crumbs. Place on greased cookie sheet and bake in 375 degree oven on both sides.
