MOM'S CHICKEN AND DUMPLINGS 
What you'll need:

1 Rotisserie Chicken (in the deli under the heat lamps)
2 cans Pillsbury Buttermilk biscuits (no substitute)
1 can Cream of Chicken Soup
1 (32 oz.) box chicken stock (in the soup aisle)
1 1/2 cups of milk
1/2 tsp. poultry seasoning
1/2 tsp. black pepper
1/2 stick butter

For Thickener:

1/4 cup flour
3/4 cup milk

Remove all chicken from the bones and dice. I have tried using boneless skinless chicken but the rotisserie chicken is much more tender and already cooked (this knocks out so much preparation time). Set chicken aside.

Cut biscuits into 1/2" nuggets... the best way is to roll each biscuit between your hands forming a long tube; then cut the tube into 1/2" nuggets. Set cut up biscuits out on a cookie sheet keeping them separated.

In a large pot, combine chicken stock, cream of chicken soup and milk, whisking together until soup is dissolved. Add poultry seasoning and black pepper. Bring to a full boil and then add real butter; reducing the heat to medium so that the liquid continues to simmer but not boil.

When the butter has melted, start dropping the biscuits into the boiling liquid. Stir occasionally reducing heat to medium or low. Once all of the biscuits have been added to the liquid, let them boil lightly as you prepare a thickener. To make a thickener, combine 1/4 cup of flour, 3/4 cup of milk; thoroughly stir together.

Slowly add the thickener to the liquid and biscuits stirring constantly. This will slightly thicken the liquid.

Once the liquid begins to thicken, add the diced chicken. Let this mixture cook, covered, for approximately 20 minutes, stirring occasionally. When biscuits are no longer doughy but firm, it is ready to be served.

Makes 6 servings.

This goes great with some sourdough bread and and butter!

Sooo glad I stumbled upon this recipe. It was a cold day and I thought chicken and dumplings sounded good, but I've never had much luck fixing it. This was so easy, and the idea of using a rotisserie chicken was brilliant. And... the dumplings actually stayed together. I've bookmarked this page - an easy and tasty treat.

BEST chicken dumpling recipe in the world!!! Had some half & half to use up so replaced the milk with it. Husband and picky granddaughter thought it was super and wanted the leftovers the next day. I will definitely make it again and will add carrots and celery to help add some healthiness ^..^

I absolutely loved this recipe. I only changed it slightly. I boiled my chicken, celery and carrots in chicken stock and then shredded my chicken. Instead of poultry seasoning I used Salt and pepper. Was absolutely fantastic and even my picky little 7 year old loved it. Thanks for sharing!

PERFECT!! I have never made chicken and dumplings before and I was soooo hungry for them. This is the recipe I will use from now on... easy, fast and absolutely delish:) I used on can of buttermilk biscuit and one can of crescent roll (it's what I had) the biscuits came out perfect and the rolls kinda vanished. This was my first time ever making chicken and dumplings, I never use to be a fan of the stuff! I was having my family over my house for Christmas eve dinner and this is what my husband and I fixed up and everyone fell in love with it and raved about it and went back for 3'rds and scraped the pot clean!!! I am making it again tonight for me and my husband but this time i'm using rotisserie chicken, I found that the other chicken felt more "processed like" because it was cubed and lacked tenderness!!! Everyone who is thinking about trying this must! I don't like the thought of serving vegetables with this meal so this is perfect as is! Thanks so much! Many happy tummies :)
