“MOM'S CHICKEN DIVAN” IS IN:

MOM'S CHICKEN DIVAN 
12 half chicken breasts, cooked and boned
1 large bunch broccoli
2 cans Cream of Chicken soup
1 cup mayonnaise
1/2 cup shredded cheddar cheese
1 tbsp. lemon juice
1 tsp. curry powder
1 8oz can sliced water chestnuts (substitute with chopped celery)

Cook chicken breasts at 375°F for 20 minutes. Lay broccoli spears in shallow 9X13-inch pan, cover with chicken halves.

Make sauce by mixing: soup, mayonnaise, lemon juice, curry powder, half of cheese and water chestnuts. Pour over top of chicken and broccoli and top with rest of cheese (add more if desired).

Bake at 350°F for 30-40 minutes and serve.

This was very good and reminded me of a recipe we made a while ago. A few modifications we did: chicken was a pre-cooked rotisserie chicken shredded, cheddar cheese was increased to 2 cups, lemon juice was increased to that from two fresh lemons (approx. 6 tbsp), increased curry to 1.5 tsp, added a dash cayenne, added a couple cloves garlic, instead of water chestnuts or celery i added a similar amount of chopped broccoli stems. It was fantastic.
