1 c. butter 1 c. sugar 1 egg, separated 2 c. flour 1/4 tsp. cinnamon 1/4 tsp. salt Pinch of baking soda Nutmeats (any kind), 1 to 2 c. as desired 1. Make pie dough of butter, sugar, egg yolk, flour, salt, cinnamon and soda mixing with food processor or hands. Dough is stiff. Form into ball. 2. Divide dough in half and roll each half out on a cookie sheet. Roll dough very thin. (I put wax paper over dough and roll with rolling pin right on the cookie sheet.) 3. Brush with egg white. 4. Chop nuts fine and press into dough. Can do this with a rolling pin or fingers. 5. Bake at 300 degrees for 25 to 30 minutes until lightly browned. 6. Cut before or after baking into 1 x 2 inch rectangles. (I usually cut afterwards with a pizza cutter, while still warm.) 7. Makes about 7 dozen. |
