CHOCOLATE ZUCCHINI CAKE 
3/4 c. cocoa
2 3/4 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 1/2 c. flour
1/2 tsp. orange rind
1 1/2 sticks unsalted butter, softened
2 c. sugar
4 eggs
2 tsp. vanilla extract
1/2 c. milk
2 1/2 c. grated zucchini
3/4 c. walnuts, chopped

Sift together first 7 ingredients; set aside. In another bowl place butter and sugar. Using a mixer, mix until fluffy. Gradually mix in eggs, vanilla, milk and flour mixture while still beating. Stir in grated zucchini and nuts. Bake in greased and floured 10" bundt pan at 350 degrees for 1 hour and 5 minutes, or until toothpick inserted comes out clean.
