SWEET POTATO PUDDING 
2 c. sweet potatoes, cooked and mashed
3/4 c. sugar
2 eggs
3 tbsp. butter, melted
1/2 c. milk
1/2 tsp. salt
1 tsp. vanilla flavoring
1 tsp. lemon flavoring
1/2 c. raisins
1/4 c. coconut
1 sm. can crushed pineapple

Mix all the above ingredients, blending well. Turn into buttered, medium-deep baking dish and dot generously with butter. Bake in 400 degree oven about 25 minutes. Top with marshmallows and brown lightly.
