COFFEE CAKE 
1 c. butter
1 3/4 c. sugar
1/2 tsp. salt
4 eggs
3 c. flour
1 1/2 tsp. baking powder
1/2 tsp. vanilla or almond extract
1 1/2 cans cherry or blueberry pie filling (1 is skimpy and 2 is a bit too much)

Cream shortening and sugar. Add eggs one at a time and beat. Add dry ingredients and flavoring. Grease 10 x 15 inch pan and pour 2/3 of batter into pan. Spread pie filling on top. Drop rest of batter on top, but do not spread. Bake at 350 degrees for 30 to 35 minutes or until it leaves the side of the pan. Glaze with powdered sugar frosting while still warm.
