BANANA PUDDING | |
1/2 c. sugar 1/3 c. flour Dash salt 4 eggs, separated 3 c. milk 1/2 tsp. vanilla flavoring 4 to 5 bananas 1 bx. vanilla wafers Mix sugar, flour and salt in top of double boiler. Stir in four egg yolks, beaten. Add milk and stir well. Cook, uncovered over boiling water until mixture thickens, stirring constantly. Cook abut 3 minutes after thickening on lower heat. Take off stove and add vanilla. Allow to partially cool. Put small amount of custard in bottom of two-quart casserole dish. Next, put a layer of vanilla wafers and a layer of bananas; continue until you have used all bananas, leaving enough room in pan to pour cooled custard over them. FOR MERINGUE: Beat egg whites until they make stiff peaks. Add 1/4 cup sugar and beat until sugar is dissolved. Pour meringue over pudding and place in 400 degree oven long enough to slightly brown meringue. |
