DRUNKEN MEXICAN BEANS 
2 lb. pinto beans
1/2 lb. or 8 pieces pork or bacon (optional)
1 or 2 med. onions, chopped
4 to 5 sticks celery, cut in thin slices crosswise
1 c. whole tomatoes, fresh or quartered
1 bottle beer

Wash pinto beans. Start in cold water. Boil for 2 hours. You may also add pork or bacon, if desired.

After 2 hours cooking time, add onions, celery, and tomatoes. Cook for 1 hour longer and add beer. If you don't want the vegetables whole, add at the beginning with the cold water. The tomato makes the bean juice reddish and thick.
