DANISH POTATO SALAD 
1/4 c. vinegar
1/4 c. water
1/4 c. sugar
1/4 tsp. salt
Dash of pepper
1 tsp. prepared mustard
2 eggs, well beaten
1 c. salad dressing
4 c. (about 2 lbs.) cooked potatoes, cubed
2 hard cooked eggs, chopped
1/2 c. chopped cucumber
1 tsp. minced onion
1 tsp. chopped green pepper

Combine first 6 ingredients in large pot. Bring to boil, reduce heat. Gradually beat in well beaten eggs. Cook, stirring constantly, until slightly thickened about 5 minutes. Beat in salad dressing. Toss together remaining ingredients. Pour on dressing, toss gently, adjust seasoning if it's necessary.
