OLD FASHIONED POUND CAKE | |
2 c. sugar 1 lb. butter 6 eggs, separated 2 tsp. vanilla 2 tsp. lemon extract 1/8 tsp. salt 1/4 tsp. ground mace 4 c. flour Cream together sugar, butter in a large bowl. Beat with electric mixer until light and fluffy. Beat egg yolks until thick, add lemon extract, add to creamed mixture. Blend in vanilla, salt and mace. Beat egg whites to stiff peaks, then gently fold into batter, alternating with flour. (Begin and end with flour). Spoon batter into greased and floured 10 inch tube pan. Bake in preheated oven 350 degrees for 1 hour and 10 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 10 minutes, then turn out onto wire rack and cool completely. Makes 10 to 12 servings. |
