1 small potato
powdered sugar
peanut butter

Boil one small potato. Cut in half and mash this. Pour powdered sugar in a little at a time. Work until this is like pie dough. Roll thin with a glass on waxed paper (using a little powdered sugar to keep it from sticking). Spread on a thin layer of peanut butter. Roll it up (as in a jelly roll). Cut into pieces and chill.
