1 c. butter 4 tbsp. powdered sugar 2 c. flour Combine just like pie crust. Pat combined mixture into full-size baking sheet with rim (a cookie sheet works just fine). Bake until light brown, about 15 minutes at 350 degrees. 2 1/2 c. dark brown sugar (about 1 box) 4 eggs 4 tbsp. flour 2 tsp. baking powder 2 c. flaked coconut 2 c. walnuts, chopped 2 tsp. vanilla Spread mixture over lightly baked crust and return to oven until light brown and toothpick, when inserted, comes out clean (about 20 minutes). While still warm, sprinkle generously with powdered sugar. When cooled, cut into squares. The easiest way to cut into squares is to use an electric knife. First, using a regular knife, loosen edges and cut into quarters. Then lift each quarter out onto a cutting board and cut smaller portions from that with the electric knife. Yield: 24 large or 48 small pieces. |
