CARROT CAKE 
4 eggs, well beaten
2 1/2 c. flour
3 tbsp. Wheat Germ
2 c. sugar
2 tsp. ground cinnamon
2 tsp. baking soda
1 tsp. salt
1 1/2 c. vegetable oil
3 jars strained carrots (sm. size)

Add all of this to beaten eggs. Mix at medium speed and then high until well mixed.

I then added walnuts, sesame seeds, sunflower seeds, raisins and well drained crushed pineapple.

Spread in 10 x 15 greased pan and bake at 350 degrees for 35 minutes or until tooth pick comes out clean. Frost when cool.

FROSTING:

1 pkg. (3 oz.) cream cheese
4 tbsp. butter
1 3/4 c. powdered sugar
1/4 tsp. vanilla

Beat at low and then high until smooth.
