SQUASH CASSEROLE 
2 lbs. boiled squash
1 (8 oz.) pkg. sour cream
1 stick butter
1 can cream of chicken or mushroom soup
1 med. onion, diced
1 pkg. bread crumb stuffing

Mix 1/2 package of stuffing mix with melted butter. Spread 1/2 of this mixture in the bottom of a medium-sized casserole dish. Mix drained squash and remaining ingredients together and pour in dish. Spread remainder of stuffing mixture on top. Bake at 350 degrees about 40-45 minutes. Serve warm.
