BRAN MUFFINS | |
2 c. whole grain flour 1 1/2 c. bran 1/4 tsp. salt 1 1/2 tsp. baking soda 2 c. buttermilk 1 egg, beaten 1/2 c. molasses or honey 2 tbsp. oil Optional: 1/2 cup oatmeal, 1 egg and 1 tablespoon oil; OR orange rind, lemon rind, raisins, dates, nuts, chopped apricots, etc.; OR reduce buttermilk to 1 cup and add 1 cup applesauce, 1 teaspoon cinnamon and 1/4 teaspoon cloves. Combine until moistened. Fill greased and floured muffin tins. Bake at 350 degrees for approximately 25 minutes. Yield: 20 muffins. |
