OAT BRAN MUFFINS 
2 1/4 c. oat bran or oatmeal
1 tbsp. baking powder
1/4 c. raisins
1/4 c. chopped nuts
2 tbsp. olive oil
1 1/4 c. water
1/4 c. honey
2 eggs

Put dry ingredients, raisins and nuts in mixing bowl. Preheat oven to 425 degrees. Put egg whites, olive oil, honey and water in a blender and mix lightly. Add this mixture to dry ingredients and stir until moistened. Put paper liners in muffin pan and fill about half full. Bake at 425 degrees for 15 - 17 minutes. Cover when cooled as they dry quickly.
