OAT BRAN MUFFINS 
2 1/4 c. unprocessed oat bran
1/4 c. firmly packed brown sugar
1 tsp. baking powder
1/4 tsp. salt
3/4 c. skim milk
1/2 c. egg substitute
1/4 c. honey
2 tsp. vegetable oil
Vegetable cooking spray

Combine first 4 ingredients in a large bowl; make a well in center of mixture. Combine milk, egg substitute, honey, and oil; add to dry mixture stirring just until moistened.

Spoon batter into muffin pans coated with cooking spray, filling 3/4 full. Bake at 425 degrees for 15 minutes. Yield: 1 dozen (121 calories per muffin).
