HAWAIIAN PINEAPPLE CHICKEN | |
8 to 10 pieces chicken breasts, legs, thighs 1 (12 oz.) pineapple tidbits, drained (save juice) 3/4 c. unsweetened pineapple juice 1 1/2 tsp. mustard 1 tbsp. soy sauce 1 onion, chopped 1 clove garlic, crushed 1/4 c. catsup 1 green pepper, chopped 1/4 c. almonds Trim fat from chicken. Brown in small amount vegetable oil, put in casserole or 9 x 13 inch pan. Make sauce of all pineapple juice, mustard, soy sauce, onion, garlic and catsup. Pour over chicken. (Prepare this far ahead, if you wish.) Bake at 350 degrees for 1 to 1 1/2 hours. Add green pepper, tidbits and nuts last 10 minutes. Serve with rice. |
