HAWAIIAN PINEAPPLE CHICKEN 
8 to 10 pieces chicken breasts, legs, thighs
1 (12 oz.) pineapple tidbits, drained (save juice)
3/4 c. unsweetened pineapple juice
1 1/2 tsp. mustard
1 tbsp. soy sauce
1 onion, chopped
1 clove garlic, crushed
1/4 c. catsup
1 green pepper, chopped
1/4 c. almonds

Trim fat from chicken. Brown in small amount vegetable oil, put in casserole or 9 x 13 inch pan. Make sauce of all pineapple juice, mustard, soy sauce, onion, garlic and catsup. Pour over chicken. (Prepare this far ahead, if you wish.) Bake at 350 degrees for 1 to 1 1/2 hours. Add green pepper, tidbits and nuts last 10 minutes. Serve with rice.

We are super-cheap so I used one diced chicken breast and cooked the whole thing on the stove for 30 minutes, then added pineapple and (salted) almonds and cooked for 15 more minutes and served over white rice. My boyfriend, who has told me before that he does not like fruit with meat, declared it a home run and told me this changed his mind about fruit with meat!! Delicious; the sauce is great. Thank you for the recipe!

Commenting again...I cannot express how much we love the sauce mix in this recipe. Last night we doubled it and used it with pork strips and frozen broccoli on the stovetop (since I'm always disappointed in how badly peppers hold up -- or don't hold up -- as leftovers). Yet again, a home run. This recipe will serve me well for years to come!
