COLESLAW SALAD 
4 c. shredded cabbage
2 c. shredded carrots
1 c. cooked whole corn
1 c. roasted peanuts
1/2 c. raisins
3/4 c. Italian dressing
2 boiled eggs, sliced
2 tomatoes, sliced
2/3 c. grated Cheddar cheese
8 leaves of fancy lettuce

In a large serving bowl arrange layers of cabbage, carrots, corn, peanuts and raisins. Pour on most of the dressing. Tuck lettuce leaves around edges. Garnish with eggs, tomatoes and cheese. Drizzle remaining dressing over the entire mess. 8 servings.
