SPANISH RICE 
1 1/2 lbs. ground beef
1 (16 oz.) can tomato sauce
1 (15 oz.) can stewed tomatoes
2 tbsp. Thousand Island dressing
2 tsp. chili powder
1 lg. bell pepper
1/2 med. onion
1 celery stalk
1 1/2 c. uncooked rice
1 clove garlic
2 tsp. butter
6 slices med. Cheddar cheese

Brown ground beef, drain and set aside. Saute diced onion, pepper, garlic and celery in 2 teaspoons butter until tender. Add to ground beef. Start ground beef on medium heat, add in 1 can tomato sauce and 1 can stewed tomatoes, then 2 tablespoons chili powder. Stir well and add 1 1/2 cups dry instant rice. Stir well, cover and simmer on low 10 minutes.

Place in large casserole dish, place 6 slices cheese over top, cover with foil, bake at 350 degrees for 10-15 minutes until rice is soft and cheese is melted. Add water, if needed, for moisture.
