EGGPLANT CASSEROLE 
1 eggplant
2 onions
2 stalks celery
1 bell pepper
1 c. tomato paste or sauce
1/2 lb. grated American cheese
Salt & pepper
Fritos

Peel and chop eggplant, combine with onion, celery and green pepper. Steam, until tender in a small amount of salted water. Salt and pepper vegetables. Mix tomato sauce, cheese and 2 ounces of Fritos and add 2/3 mixture to the steamed vegetables. Place in casserole, top with cheese Frito mixture. Bake at 350 degrees until cheese melts, about 30 minutes.
