COUNTRY BAKED LIMAS 
2 c. dried lima beans
1/4 lb. bacon or ham hock
1 med. onion, sliced
1/4 c. light molasses
2 tbsp. chili sauce
1 1/2 tbsp. brown sugar
2 tsp. salt
1 tsp. mustard
1 c. tomato sauce

Preheat oven to 250 degrees. Wash beans and then soak overnight in 1 quart water. Simmer in the same water for 1/2 hour; drain but reserve the liquid.

Place the beans, bacon, and onions in a bean pot or baking dish in layers. Combine the other ingredients and pour over the beans. Add enough of the saved liquid to cover.

Bake 4-6 hours covered or until tender. Uncover for the last 1/2 hour to brown. Makes 8 servings.
