BREAKFAST MUFFINS 
2 c. flour
1/2 tsp. salt
4 tsp. baking powder
2 tbsp. sugar
1 c. milk
1 egg, beaten
2 tbsp. melted and cooled shortening
1/2 c. raisins
1/4 c. chopped pecans

In large bowl, sift dry ingredients together. Combine milk, egg and shortening. Add to dry mixture. Stir until just blended but not smooth. Fill greased muffin pans two - thirds full; bake at 400 degrees for about 25 minutes. Yields 12 muffins.
