BREAKFAST MUFFINS 
2/3 c. self-rising flour
2 tbsp. shortening
1/2 c. buttermilk
1 egg
1/2 c. cheese, grated (optional)

Lightly cut shortening into flour with a spoon. Beat egg and milk well; add to flour mixture, stirring lightly. Add cheese if desired. Bake for 10 minutes at 375 degrees. Yield: 2 servings.
