CORN AND SAUSAGE 
1 1/2 lb. smoked sausage, sliced in 1/4-inch pieces (I use beef)
3 tbsp. butter
1 medium onion, diced
1 bell pepper, diced
1/2 cup brown sugar
1/2 tsp. cayenne pepper
1 (16 oz.) bag frozen corn

Brown sausage in butter in large skillet over medium heat. Add diced onion and bell pepper, sauté for a few minutes. Add brown sugar and cayenne pepper. Cook until sugar is melted, stir frequently to coat. Add corn and lower heat to simmer. Simmer around 15 to 20 minutes.

Turn off heat and allow food to rest about 5 minutes... Goes great served with bread and butter!
