HOMEMADE SUMMER SAUSAGE 
5 lb. hamburger
5 tsp. (rounded) Morton tender quick salt
2 1/2 tsp. mustard seed
2 1/2 tsp. pepper
1 1/2 tsp. garlic salt
2 tsp. Hickory smoked salt, dry or liquid

Mix well in a large bowl and refrigerate. Take out each day for 3 days and knead well. On the 4th day, make into rolls, work back and forth well to remove all the air pockets so they will hold their shape.

Lay on broiler pan and bake at 350°F for 8 hours. Makes 5 loaves about 8 to 9 inches long.

I had made this sausage for many years at Christmas time. I gave it as gifts and had requests every year for it again. About 5 years ago I lost the recipe and have been looking long and hard for it. I finally found it!!!! Thank you so much!!! My son will be very surprised this Christmas when I give it to him (he asks me every year if I found the recipe yet), along with other family members.
